Doggie Birthday Cake #1: Carrot Cake with Cream Cheese Icing

1-1/2 cups melted unsalted butter
3 teaspoons baking powder
1-1/2 cups honey
1 teaspoon cinnamon
4 eggs
2-1/2 cups finely shredded carrot
4 cups whole wheat flour
3/4 cup sesame or flax seeds
1/2 teaspoon baking soda
16 ounces cream cheese, softened
8-ounce stick of unsalted butter, softened
Preheat oven to 350º.  In one large bowl, mix butter, honey, and eggs.  In a separate bowl, sift together the dry ingredients including flour, baking powder, baking soda, cinnamon, carrot, and seeds.  Slowly mix the dry ingredients into the butter mixture.  Do not beat.
Generously butter one large pan or two loaf pans, and pour cake mixture into the pan(s).  Bake for 45 minutes, and then remove from oven and allow to cool.  Mix the icing ingredients in a medium size bowl.  Ice the cake and refrigerate up to one week.
