4 cups frozen mixed carrots & peas
4 cups cooked brown rice
2 cups chopped or ground raw turkey (chicken or ground beef can substitute)
1 cup bread crumbs
4 eggs, beaten
3 tablespoons minced parsley
Mix all ingredients together and place in a loaf pan that has been greased with olive oil. Bake at 350º for 45-50 minutes. Cool completely before serving. Refrigerate remaining portions.
