Carrot Liver Muffins

2 cups whole wheat flour

1/4 cup wheat germ
1 tbsp baking powder
1/2 tsp powdered nutmeg
1/2 tsp ground ginger
1/2 tsp cinnamon
1/2 cup milk
1/2 cup olive oil
1/2 cup honey
3 eggs
1-1/2 cups grated carrots
1/2 cup liver bits, diced, sauteed, and cooled

Preheat the oven to 400º.  Set aside the carrots and liver.  Combine the dry ingredients, and then combine the wet ingredients.  Mix wet and dry ingredients together; then add carrots and liver.  Spoon batter into oiled muffin tins.  Bake for 15 minutes (or 8 minutes for mini-muffins).
