Yields 3 dozen
1/2 cup butter
1 cup almond butter
2/3 cup firmly packed brown sugar
1/2 teaspoon baking soda
1-1/2 cups unbleached white flour
Preheat the oven to 375º. Beat the butter and almond butter together until soft. Add the sugar and beat until light and fluffy. Add the egg and beat until all of the ingredients are mixed together.
Add the remaining ingredients, starting with one cup of flour and the baking soda. Mix until just combined. Add more flour, but just enough to form a nonsticky dough. Roll the dough into small balls. Place on a buttered cookie sheet and flatten with a fork. Bake at 375º for 10-12 minutes.
Serve when cool. Store in airtight containers at room temperature for up to two weeks.
